Thanks for the update. But...
Interestingly, when I checked for Joomla updates, version 5.1.0 did not appear, even though it was already available. I downloaded the stable update file directly from the Joomla website and applied it manually, and everything worked perfectly.
What exactly do you mean by applied it manually? Unless you do a proper Install or Upload and Install you may miss execution of SQL queries. You need to check in Update: Options that you have the Update Channel set to Default,
When I mentioned that I "applied it manually," I meant that I uploaded the Joomla! 5.1.0 Upgrade Package (.zip) file because the update was not being detected automatically (something related to manifests xml maybe? if incorrect version was listed...).

I performed the "Upload and Install" process, which ensures that all necessary SQL queries are executed as part of the installation process.
